How Long to Broil Steak
Position your oven rack so that the steaks will be no more than 4-6 inches from the heating element. Preheat oven on broil setting and place the room temperature steaks on your broiling pan and into the oven.
- Medium Rare – 145 degrees Fahrenheit
- Medium – 160 degrees Fahrenheit
Strip, Ribeye, Flat Iron, or Tenderloin
- 1″ – 12 minutes for medium rare, 15 minutes for medium
- 1 1/2″ – 18 minutes for medium rare, 22 minutes for medium
Top Sirlon
- 1″ – 15 minutes for medium rare, 20 minutes for medium
- 1 1/2″ – 25 minutes for medium rare, 30 minutes for medium

Bring Steak to Room Temperature – Allow the steak to rest at room temperature 30 minutes. This allows to cook more evenly all the way through.

Preheat Broiler – Preheat 5-10 minutes for the best results.

Dry Steak – Surface moisture can delay or prevent searing, so removing that extra moisture creates even browning.

Add a Rub – Coat with thick flakes of black pepper, your favorite seasoning or rub.

Broil – Place steak in an oven baked dish and broil. Turn steak halfway through – 6-12 minutes per side depending on thickness of steak and desired temperature. See notes for times. Internal temperature should reach 145 degrees for medium rare.
